Who's Hungry?

Mrs. Noise's Sofa-King Good Tostadas!

Prep Time: 5 minutes.
Sauté red onion (1/2 cup), and a small yellow or red (thin sliced) bell pepper in a little oil. Once they're getting a little 'sizzle' on them, add a tomato base to it. (I like to use the Goya brand "Sofrito" cooking base)… about 4 tablespoons - or to taste - should do. Let that simmer about 3-4 minutes. Then add 12 ounces of soy crumbles (any brand - check your grocers freezer) and mix it all together. Let simmer for ten minutes or so, and stir it up a few times along the way.
While that's simmering, get your shredded cheddar cheese, and sliced cherry tomatoes ready to go.
For the tostada shell, you can buy premade shells and that will do just fine. I prefer to buy the soft corn tortillas and heat them until they're crispy on another flat pan, but that's your call, either way these are going to be delicious. Oh, and don't forget to have some broccoli slaw and 'matchstick' style carrots for the garnish. Lettuce is just boring. :)

OK, once your soy crumbles/peppers/onions/Sofrito mixture is heated through you're ready to go. Sprinkle a little cheddar cheese directly on to the tostada shell and scoop a couple of tablespoons of your heated deliciousness directly on top of that. Drop a few sliced cherry tomatoes and some of that broccoli slaw and carrot garnish right over the top. Splash with a couple of shakes worth of Mrs. Noises sexy sauce and you are ready for a meat-free culinary delight! Enjoy!!!
